Whole Grain Penne Greek Salad Pasta Shaker

Greek Yogurt Tzatziki Ingredients:
64 ounces low-fat Greek yogurt
40 ounces cucumber, grated, squeezed until almost dry
½ cup lemon juice, fresh
2 teaspoons minced garlic
2 tablespoons Kosher salt
2 teaspoons black pepper
Whole Grain Penne Greek Salad Pasta Shaker Ingredients:
6 pounds 4 ounces Whole Grain Penne, Barilla
7 pounds 13 ounces cucumber, diced
16.5 pounds kalamata olives, sliced
1 pounds kalamata olives, sliced
1 pounds feta cheese
6 pounds 4 ounces Greek yogurt tzatziki, prepped
Instructions

Greek Yogurt Tzatziki Directions:

  1. Make tzatziki by whisking together yogurt, grated cucumber, lemon, minced garlic, kosher salt and black pepper.
  2. Cover, label with date, time and initials.
  3. Chill to below 40ºF.

Whole Grain Penne Greek Salad Pasta Shaker Directions:

  1. Cook pasta according to package directions.
  2. Drain pasta and rinse with cold water, chill to below 40ºF.
  3. Layer ingredients in the shaker container as follows: Pasta, tzatziki, cucumbers, cherry tomatoes, Kalamata olives and Feta cheese.
  4. Cover, label with date, time and initials.
  5. Chill salad shakers to below 40ºF.
